It seems I keep coming back to a major theme - rocks being reduced to sand and grit by moving water. In this case, it's very old rock, as the Smokies are very old mountains.
Soon my wife and I will be moving west (to Las Vegas, believe it or not). I'll have to discover new streams and new waterfalls, although I know I'll have to drive a ways to find them. Most likely in Utah and Arizona, I suppose.
There is, of course, the Colorado River (the Grand Canyon) and the Virgin River (Zion NP). I've seen parts of these wonderful waterways. And I'm sure there are others. I just have to learn where they are.
